 The photo on the right is a lemon meringue pie. As you can see the pie crust is quite thin and the meringue part is quite thick. The pie crust is simply butter, flour and water. The meringue is 5 eggs whites and about 150 grams of icing sugar. The lemon part is made from the grated rind, flesh and juice of 3 fresh lemons, 3 egg yolks, brown sugar, honey, cornstarch and water.
